This Gaggia Carezza is equipped with a CAL3200 PID to control the brew & steam temperature. The brew temperature is tuned to 200°F. This shot was pulled using my home roasted beans; Mexican Chiapas roasted to Full City Plus. The beans were ground with a Rancilio MD-50 commercial grinder. The shot ran a bit long @35 seconds, but the color is good and the taste is OK for stale(ish) beans. Tex

Hi. I recently got a Carezza and am having a terrible time getting a decent pull. I have a Breville 450 burr grinder, which admittedly isn’t the best, but I did the recommended modification to make it finer that all the forums say turn it into a good espresso grinder. My pull times are about right, but I have no crema at all. My spent puck is about right, maybe a bit moist afterward. Im thinking it may be the beans. Any suggestions, tricks you have for the Carezza? Thanks!
This portafilter is a stock Gaggia with a single spout. I do modify portafilters to make them bottomless by cutting the bottoms out.
